Thai Prawn Coconut Soup


  • 1 tablespoon vegetable oil
  • 2 tablespoons freshly grated ginger
  • 1 stalk lemon grass, minced
  • 2 teaspoons red curry paste
  • 4 cups chicken broth or water
  • 3 tablespoons fish sauce
  • 1 tablespoon light brown sugar
  • 1 packet of Spargo Instant Coconut Mix dissolved in 150 ml of water
  • ½ pound fresh shiitake mushrooms, sliced
  • ½ kg prawns - peeled and deveined
  • 2 tablespoons fresh lime juice
  • Salt to taste
  • ¼ cup chopped fresh cilantro


  1. Heat the oil in a large pot over medium heat.
  2. Stir fry the ginger, lemongrass, and curry paste in the heated oil for 1 minute.
  3. Add the chicken broth/water over the mixture.
  4. Add in the fish sauce and brown sugar.
  5. Simmer for 15 minutes.
  6. Add in the coconut milk and mushrooms.
  7. Cook until the mushrooms are soft.
  8. Add the prawns
  9. Stir in the lime juice.
  10. Season with salt.
  11. Garnish with cilantro.

Moist Pumpkin Bread


  • 3½ cups all-purpose flour
  • ⅔ cup white sugar
  • 2 cups pumpkin puree
  • 1 cup vegetable oil
  • ⅔ cup Spargo Instant Coconut Mix coconut milk
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1½ teaspoons ground cinnamon
  • ⅔ cup flaked coconut
  • 1 cup chopped toasted walnuts


  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease and flour two 8x4 inch loaf pans.
  3. In a large bowl combine the flour, brown sugar, white sugar, pumpkin puree, oil, coconut milk, baking soda, salt, ground nutmeg and ground cinnamon.
  4. Mix well.
  5. Fold in the nuts and flaked coconut.
  6. Pour batter into the prepared pans.
  7. Bake at 350 degrees F (175 degrees C) for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean.
  8. Remove from oven and cover loaves with foil tightly. Allow to stand for 10 minutes.
  9. Remove foil and turn out onto a cooling rack.
  10. Cover lightly with the foil and allow to cool completely.

Coconut Pancake Syrup


  • 1 packet of Spargo Instant Coconut Mix dissolved in 150ml of water
  • 2 tablespoons cornstarch
  • 2 cups light corn syrup
  • ½ cup brown sugar
  • ½ cup shredded sweetened coconut


  1. Whisk together the coconut milk and cornstarch in a saucepan until the cornstarch is dissolved.
  2. Pour in the corn syrup, sugar, and coconut.
  3. Bring to a boil, stirring continually. As soon as the mixture comes to a rolling boil, remove from heat.
  4. Allow to cool completely before serving.

Yam Coconut Tapioca Dessert


  • 4 cups water
  • 1 cup small, white tapioca pearls
  • 6 cups water
  • 2 cups raw yam, peeled and cut into 1/2-inch cubes
  • 1 packet of Spargo Instant Coconut Mix dissolved in 150ml of water
  • ⅔ cup rock sugar


  1. In a saucepan with a lid, bring 4 cups of water to a boil.
  2. Add tapioca pearls (pearls will swell in size).
  3. Reduce heat to a simmer, and cook the tapioca until pearls begin to soften, about 7 minutes.
  4. Cover the pan, and let the tapioca pearls stand for 10 to 15 minutes, until the centers are clear.
  5. Bring 6 cups of water to a boil in a large saucepan and add the yam.
  6. Reduce the heat to medium-low and simmer the taro until soft.
  7. Add Spargo Instant Coconut Mix and rock sugar, stirring to dissolve the sugar, and simmer for 20 more minutes.
  8. Stir in the soft tapioca pearls until well combined.
  9. Serve chilled or hot.

Pina Colada Salad Sauce


  • 1 (16 ounce) container vanilla yogurt
  • ¼ 1 cup sweetened, flaked coconut
  • 2 cups raw yam, peeled and cut into 1/2-inch cubes
  • ½ packet of Spargo Instant Coconut Mix dissolved in 75ml of water
  • 2 pineapples, peeled, cored, and cut into 1-inch chunks
  • 3 bananas, peeled and sliced


  1. Whisk together the yogurt, coconut, and coconut milk in a large bowl.
  2. Stir in the pineapple and banana or any fruits of your choice. Serve cold.

This is equivalent to 1 coconut. If you do not want it so thick, just add water accordingly

What is the difference between liquid coconut milk in package form and Spargo Mills Instant Coconut Mix?

Liquid coconut milk contains 30% coconut content and 70% water.

Why don't we buy fresh coconut milk or santan from the market?

Fresh coconut santan is subject to a lot of handling and hence exposure to bacteria infestation. That is why fresh coconut santan cannot keep well and normally would turn bad within a few hours. With Spargo Mills Instant Coconut Mix, you can leave any unused powder in the fridge and it can last for 2 months. Freeze it and you can use it for months.

Can we use the Spargo Mills Instant Coconut Mix immediately?

When you need to use the Spargo Mills Instant Coconut Mix please ensure that you mix and leave aside for at least 20 to 30 minutes before using. This will ensure that the coconut milk will thicken accordingly.
