Pulut Tai Tai - A Classic Nyonya Kuih with a Beautiful Blue Hue

This petite looking Nyonya Kuih has the famous bright blue colour tinted on the kuih. This simple yet elegant Nyonya delight is also a traditional Nyonya wedding specialty, a MUST have in any Peranakan wedding. Commonly served as a dessert or a delicacy during the Straits Chinese wedding, this 'kuih' is made of glutinous rice steamed in coconut milk and compacted in a wooden frame to be cut into desired shapes. The vibrant blue in certain parts of the glutinous rice enhances the beauty of this 'kuih', known also as 'Pulut Tai Tai' for its elegant outlook. 'Tai Tai' refers to rich man's wife's who lives a life of leisure. The contrasting colour of the coconut jam/'kaya' together with the vibrant blue and white of the glutinous rice makes this 'kuih' delightful and pleasing to the eyes. It tastes equally good with either the pandan-flavoured or the usual brown 'kaya'. The slight tinge of saltiness from the glutinous rice coupled with the sweetness of the 'kaya' makes this 'kuih' a delight to savour.


  • 820g glutinous rice (soaked overnight)
  • 1 teaspoon of Blue Butterfly Powder (to your desired colour) - dissolve in 3 tablespoons warm water
  • a few pieces banana leaf
  • 760 ml thick coconut milk
  • 3 pandan leaves (knotted together)
  • 2 tsp salt


  1. Dissolve 1 teaspoon of Blue Butterfly Powder in 3-4 tablespoons of water - let it rests.
  2. Mix soaked glutinous rice with Ingredients B and let it rest for 10 minutes.
  3. Steam the rice over high heat for 30 minutes. Remove from the heat and mix well with chopsticks.
  4. Stir in blue butterfly powder liquid into the cooked rice, mix well giving it a nice marble like creation and steam it for 5 minutes.
  5. Line a 19 cm square tin with banana leaves. Spoon cooked blue rice and white rice into the tin
  6. Cover the rice with banana leaf and place a heavy object on top to compress the rice - traditionally a mortar is used in the Peranakan household.
  7. Set it aside to cool completely before cutting into pieces. Serve with Kaya

Butterfly Pea Chiffon Cake

Traditionally, most bakers would boil the sun dried butterfly pea flowers to extract its colour and it could be a bit light or even too dark so the agony of knowing how much water or flowers to use is an unknown - plus there are enzymes and good nutrients lost in the boiling process. You could save about 30 - 45 minutes from that tedious process with our Blue Butterfly Pea Flower Powder. Here's the recipe - Enjoy!


  • ⅛ tsp salt
  • ½ cup sugar
  • 1 ¼ cup cake flour, sifted
  • 1 tsp baking powder, sifted
  • 6 large egg whites
  • ¾ cup sugar
  • ⅛ tsp cream of tartar

** 1 teaspoon Vanilla essence or any other flavour that you like


  1. Pre-heat oven to 180℃.
  2. Sieve (A) both flour ,baking powder and salt except sugar and oil in a mixing bowl, set aside.
  3. Combine ingredients (B) egg yolk and oil in another mixer or mixing bowl, beat until well blended. Add in ingredients (A), beat until smooth.
  4. Beat ingredients (C) in mixer on high speed until you have a stiff peak and glossy mixture. It should not fall out when you turn the mixing bowl over. Fold 1/3 of the egg whites into the egg yolks mixture and continue to do so until egg whites is finish. Remember to fold in gently until well mixed. (Do not beat or mix, just fold!)
  5. Mix in 1 tablespoon of Uptrend2u Blue Butterfly Pea Flower Powder into the cake batter and mix well. Prepare an ungreased 10" tube pan. Pour the batter into the pan.
  6. Bake for 50 minutes to 1 hour - use a bamboo or metal skewer to test the cake. Just insert the skewer into the centre of the cake and it should come out clean.
  7. Invert cake and let it cool complete in the pan. When it has cooled, loosen the edge of the pan with knife and remove cake.
  8. Cut the cake to 12 pieces or your desire size and serve with a pot of Blue Tea or Blue Latte.

Blue Butterfly Pea Flower Powder Dumpling

Blue Butterfly Pea Flower Powder Dumpling is a Thai cuisine recipe. Requires some artistic perseverance.


  • ¼ tsp Uptrend2u Blue Butterfly Pea Flower powder
  • 50ml hot water
  • 120g rice flour
  • 1 Tbsp tapioca flour, plus extra for rolling
  • 1 Tbsp potato starch
  • 1 Tbsp Uptrend2u Virgin Coconut Oil Organic BioActive
  • ½ Tsp lemon juice
  • Garlic oil, fresh chilli and coriander, to serve


  • 2 Tbsp Uptrend2u Virgin Coconut Oil Organic BioActive
  • 50g sweet corn, finely diced or whole
  • 50g sweet pickled radish, finely diced, optional
  • 50g dried prawns, soaked
  • 50g carrot, diced
  • 50g raw peanuts, roasted and lightly crushed
  • 50g raw cashew nuts, roasted and lightly crushedr
  • 50g dried shiitake mushrooms, reconstituted in hot water, drained and diced or fresh shiitake mushrooms
  • 1 red chilli, diced, optional
  • 50g water chestnuts, diced
  • 1 Tbsp light soy sauce
  • 1 Tbsp fresh coriander, leaves picked and finely sliced
  • 1 Tbsp spring onions, finely sliced
  • 1 Tsp kecap manis
  • ¼ tsp ground black pepper
  • 1 tsp cornflour


Dissolve the Uptrend2u Blue Butterfly Pea Flower powder in the room temperature water.

Place the rice flour, tapioca flour, potato starch, virgin coconut oil and lemon juice into a bowl. Pour in Blue Pea Flower liquid and combine well. Transfer to a frying pan and stir continuously over medium heat until the mixture thickens. Reduce the heat to low and continue stirring until the dough appears translucent. Remove from the heat, cover and stand for 10 minutes. Meanwhile, for the filling, heat the oil in a wok over medium heat. Add the pickled radish, corn and carrots and stir-fry for 5 minutes. Add the remaining ingredients, stir for 2 minutes, then remove from the wok and set aside to cool.

After 10 minutes of resting, gently knead the dough on a work surface dusted with extra tapioca flour until smooth.

To make the dumplings, divide the dough in half (keep one half covered while you roll out the other half). Roll one half into a sausage and cut into 30 g pieces. Using a small rolling pin, flatten each piece into 5 cm discs. Place a teaspoon of filing into the center of the dough. Form into a ball by folding the edges inwards and seal the dumpling by pinching. Using a pair of flat-edged tweezers, gently pinch the top without puncturing the dough. Keep working downwards to create petals. Repeat with the remaining dough and filling.

If you find this too troublesome, then just roll them into a ball as per the image. The dumplings will taste just as good. Place in a large steamer basket lined with lightly oiled baking paper and steam for 5 minutes. Brush with garlic oil and serve immediately with fresh chillies and coriander.

Butterfly Pea Flower Granita

Makes 4 to 6 servings
  • 2 Cups Water
  • 1 Cup White Sugar
  • 1 Teaspoon Uptrend2u Butterfly Pea Flower Powder


  1. Combine sugar and water in 1-quart pot and bring to a boil. Simmer for 5-6 minutes until sugar is fully dissolved, then remove from heat to cool.
  2. Add Uptrend2u Butterfly Pea Flower Powder to steep in syrup.
  3. When cooled, refrigerate syrup to chill for 1-2 hours.
  4. Add syrup to clean, shallow bowl and place in freezer. Check syrup periodically and stir with fork. As syrup freezes, crystals will form on top and sides. Moving these crystals will form flaky ice that can then be covered and kept frozen for up to a week.

Blue Surf Cake, also known as Ocean cake, Tidal Wave cake, Cloud cake, Beach cake. Maybe it could even be Galaxy cake…! This is basically your recipe when you’re looking for a fun cake that’s blue-themed and natural. Happy Baking!

  • MAKES: 5" CAKE


  • ½ cup raw cashews
  • 3 soft medjool dates, pitted
  • 1 tbsp maple syrup
  • ¾ cup raw cashews, pre-soaked & strained (*see notes below)
  • ⅓ cup coconut cream from a can of full fat milk that's been chilled overnight in the fridge
  • 3-4 tbsp maple syrup (to taste)
  • ½ tsp raw ground vanilla bean (or contents of half a fresh vanilla bean pod) or ½ tsp vanilla essence
  • ½ tsp salt
  • 1¼ tsp Blue Butterfly Pea Flower Powder for color


  1. Process all crust ingredients in a food processor. Transfer into a 5" springform pan and press down into an even flat crust. Freeze while working on next step.
  2. Add all filling ingredients, BUT ONLY ¼ tsp blue butterfly powder, to a power blender and blend into a smooth creamy consistency. Remove a third of this mixture and pour it into the springform pan over the crust, trying to keep it mostly to one side (let's say keep it to the right).
  3. Add in ½ a tsp more blue butterfly powder to the remaining mixture in the blender and blend once again to combine. Transfer half of this mixture into the springform pan, placing it mostly into the center, or slightly to the left side.
  4. Add another ½ tsp blue pea powder to the remaining mixture in the blender and blend to combine. Transfer this mixture into the pan, pouring it mostly to the left. Now use a skewer or a small spoon to lightly swirl the mixtures together. I used a circular motion and went mostly around the edges of the pan to create the sea wave effect. Feel free to improvise -- just don't over-mix or the different layers will merge into one color.
  5. Freeze for 6 hours or overnight. Keep frozen until serving time. Slice and enjoy! Keep any leftovers frozen.


*To pre-soak nuts: place in a glass bowl, covered with water, and leave to soak for 4 hours (or overnight in the fridge). Then strain and discard the water.
For a quick pre-soak, cover with boiled water and soak for 15 mins, then strain and discard water. (Note: this technique doesn't preserve the nutrition of the recipe as well as the traditional soaking technique above).

Note: The purpose of soaking the nuts is to re-hydrate them and plump them up for blending into a smooth, cheesecake-like consistency. Proper soaking techniques also maximize nutrition and digestibility.

Magic Blue Butterfly Lemonade

Native to Southeast Asia, butterfly pea flower tea has a similar taste and health benefits to green tea, but no caffeine. It’s also been called “mood ring tea” for its cool color-changing abilities! For the full “mood ring” effect, brew the butterfly pea flower powder. This will turn the tea bright blue. If you add the lemon to the tea prior to blending, the liquid will turn purple. Isn’t nature cool.


Step 1
Create 1 liter of Blue Butterfly Tea in a glass container by adding ¼ tsp Blue Butterfly Pea Flower Powder to 1 liter of water. If you prefer a darker blue tea, you can use up to ½ tsp of powder. (For optimal mixing, add 1/4 tsp Blue Butterfly Pea Flower Powder into 1 cup of hot water first. Stir well. Then, pour the mixture through a strainer into the liter of water.)

Step 2
Pour 1 cup of Blue Butterfly Tea into a glass.

Step 3
Create color-changing Lemon Mixture in a separate small glass container. To the small glass container, add:

  • 5 tsp Lemon Juice
  • 2 tsp Honey (Be sure to use a light colored honey. Darker honeys will cause your final drink to turn purple, rather than pink. Black honeys will cause your final drink to turn gray, rather than pink.)
  • 2 drops Butterscotch Toffee Stevia
  • Pinch of Icelandic or Himalayan Salt
  • Stir well

Step 4
Slowly pour the Lemon Mixture into the glass of blue tea and watch the colors change before your eyes.

Pro Tip:
For extra style points, freeze some blue butterfly tea into ice cubes before creating your Magic Blue Butterfly Lemonade. Before you pour in the Lemon Mixture, add one blue butterfly ice cube to the blue butterfly tea. The icy blue orb hovering in the center of the carnation pink liquid is nothing short of stunning.

Try to make the tea with Alkaline Water. This will make the tea not only healthy but triple healthy!

2-Tone Blue Butterfly Powder Cheesecake

  • Blue Butterfly Powder – ½ teaspoon
  • 250g packet plain sweet biscuits
  • 125g butter, melted
  • 2 x 250g packets cream cheese, softened
    1. 1 x 250g – normal
    2. 1 x 250g – mixed with ½ teaspoon Blue Butterfly Pea Flower Powder
    3. or to the blue intensity colour that you prefer
  • 3/4 cup caster sugar
  • 3/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon finely grated lemon rind
  • 3 eggs
  • Frozen or fresh strawberries, thawed, to serve
  • Butterfly Pea Fresh flowers to garnish (if available


Step 1

Preheat oven to 160°C/140°C fan-forced. Grease a 6cm-deep, 22cm round (base) spring-form cake pan.

Step 2

Process biscuits until mixture resembles fine breadcrumbs. Add butter. Process until combined. Press mixture over base and sides of pan leaving a 2cm gap from top. Refrigerate for 30 minutes.

Step 3

Process 250g cream cheese, sugar, sour cream, vanilla and lemon rind until smooth. Mix 250g with Blue Butterfly Powder. Add eggs, 1 at a time, processing until just combined.

In another bowl process 250g of cream cheese with Blue Butterfly Powder. Our blue butterfly powder dissolve easily and mixes well. Pour into prepared pan both the processed cream cheese to give it the layer or marble look.

Bake for 50 minutes to 1 hour or until just set and centre wobbles slightly. Allow to cool in oven for 2 hours, with door ajar. Refrigerate overnight. Serve with strawberries and/or fresh butterfly pea flower (if available).

Lastly, sprinkle with Blue Butterfly Powder for that royal blue intense effect! Enjoy!

Orange Infused Blue Butterfly Pea Flower Drink

How to make Oranges sexy again!

Hot days are coming again. You may want to have some natural fruit juices with loads of health benefits for your family.

Here's an easy recipe for you. You don't need to squeeze the orange nor boil any sundried flowers - all you need are as follows:


  • 2 large oranges, washed and sliced
  • ¼ to half a teaspoon of Blue Butterfly Pea Flower Powder (or to your desired colour)
  • Honey or rice sugar or Maltitol (if you would like it sweet)
  • Handful of edible flowers e.g. butterfly pea flower, violas or nasturtiums (optional)


  1. Have 2 cups of warm or tepid water.
  2. Add the Blue Butterfly Powder and stir well and dissolve. Once the mixture has cooled, pour the Blue
  3. Butterfly mixture into an ice cube tray and freeze for at least 6 hours.
  4. Add oranges to a pitcher. Using a wooden spoon gently muddle the oranges to release some of their juice and flavour.
  5. Add Blue Butterfly ice cubes then fill pitcher with ice water and see its colour changing effect.

BLUE Pineapple Iced Tea with Sage & Mint

Blue Butterfly Pineapple Tea. Today’s recipe is a quick and cooling Blue Butterfly Pineapple Iced Tea perfect for hot days.

We love those juicy sun ripened pineapple's and not just because they taste good, they help with digestion, boost immunity, lower inflammation and relieve pain.

Researchers have even found that pineapple can kill off certain cancer cells and even slow the spread of some cancers.

So here’s how to make fresh Blue Butterfly Pineapple Iced Tea:

  1. ½ to 1 teaspoon of Blue Butterfly Powder (to your desired color)
  2. 1 teaspoon sugar or Maltitol
  3. 4 cups boiling water, 4 cups ice water to make a tepid mixture
  4. ⅓ cup fresh lemon juice
  5. Some sage leaves - steeped in hot water and to mix into the pineapple juice
  6. Some mint leaves to garnish
  7. 1⅓ cups fresh pineapple juice
  8. To make fresh pineapple juice, core the fruit and cut into bite-sized pieces. Add to your blender and blend until smooth. Strain into a large jar using a fine mesh strainer

Roti Jala Dual Colour

Traditionally, Roti Jala comes in just one colour - yellow but we needed that something extra, a modern twist so Chef Sue has created Roti Jala more appealing using 2 colours and 2 ways of making them. Your imagination is your limit...... Here's the recipe - Enjoy!


  • 2 cups all purpose flour
  • 2 eggs
  • 1 tsp salt
  • ½ cup water
  • ½ cup coconut milk
  • ½ tsp Blue Butterfly Pea Flower Powder
  • ½ tsp turmeric powder
  • Oil to grease the pan


  1. Put flour in large bowl and sieve it.
  2. Add salt and 2 eggs in the middle and gradually add some water & Spargo Mills Instant Coconut Mix to make a batter - and separate the batter into 2 bowls
  3. Add Blue Butterfly Pea Flower Powder and mix evenly - in the 1st bowl.
  4. For brighter effect and colour - dissolve Blue Butterfly Pea Flower Powder in tepid water and let it rest for 15 minutes. (As it is very concentrated the colours will keep expanding)
  5. In the 2nd bowl of batter add the turmeric powder and stir evenly
  6. Lastly put into roti jala mould or a funnel and start drizzling the batter into the hot pan in a quick circular motion
  7. Cook for 1-2 minutes
  8. Remove from pan and fold in the sides and roll the roti jala
  9. Garnish with coriander or salad and serve with chicken curry

Royal Blue Seri Muka

To keep to tradition, most Kueh Seri Muka makers would pound the Pandan leaves to extract its green colour & fragrance.   • 25g tapioca flour
  • 450ml thick coconut milk
  • 25g grams rice flour
  • 25g of mung bean
  • 1 tbsp of sugar
  • ½ tsp salt
  • Glutinous rice
  • Oil to grease the pan

Custard Topping

  • 2 tbsp cornflour
  • 2 tsp rice flour
  • 1 cup full cream milk
  • ¾ cup sugar
  • 1 tsp vanilla bean paste
  • 270ml coconut cream
  • 5g Blue Butterfly Pea Flower Powder

(OR to keep to tradition - 5 pieces of pandan leaves for the green colour)


  1. Wash and soak rice for at least three hours or overnight
  2. Drain and mix in coconut milk and salt
  3. Steam for 30 minutes
  4. Let cool and rests for 10 minutes and than press the rice into a 8" pan square pan
  5. Using a piece of plastic wrap, press rice down to compress slightly and form the base
  6. Combine all custard topping ingredients except for coconut cream
  7. Stir over medium heat until very thick, whisking continuously
  8. Add coconut milk and emulsify
  9. Add the Blue Butterfly Pea Flower Powder and stir well
  10. Spread custard topping onto compressed rice base. Steam for 15 minutes
  11. Cool and slice into diamonds

What is the difference between Blue Butterfly Pea flower (powder?) and the flower version?

Safe, Healthy & Convenient in a 10 gram sachet you can bring it anywhere you want to make a cup of tea or any beverage or even to cook with. The Blue Butterfly Pea Flower Powder is very concentrated – all you need is juat a little that goes a long way.

For the Sundried Flowers you would need to boil in hot water to extract its colour to either cook with or just to make a cup of tea. Remembering that in extremely hot water some the nutrients may be lost.

Yes, either way is available to you – it really depends on what you are preparing and how experimental you wish to be. It is best to dissolve a small quantity in tepid or warm to test the amount of Blue that you want and let it rest for 20 minutes as the powder will keep continuing to dissolve.

In making a latte for example the powder is mixed with the milk when frothing and then produces the blue colour before adding to the coffee. For cakes as an example the powder can simply be sprinkled into the mixture.

In Nasi Kerabu, you can sprinkle on the rice after you have washed them and let it rests for 15-20 minutes.
