Pulut Tai Tai - A Classic Nyonya Kuih with a Beautiful Blue Hue

This petite looking Nyonya Kuih has the famous bright blue colour tinted on the kuih. This simple yet elegant Nyonya delight is also a traditional Nyonya wedding specialty, a MUST have in any Peranakan wedding. Commonly served as a dessert or a delicacy during the Straits Chinese wedding, this 'kuih' is made of glutinous rice steamed in coconut milk and compacted in a wooden frame to be cut into desired shapes. The vibrant blue in certain parts of the glutinous rice enhances the beauty of this 'kuih', known also as 'Pulut Tai Tai' for its elegant outlook. 'Tai Tai' refers to rich man's wife's who lives a life of leisure. The contrasting colour of the coconut jam/'kaya' together with the vibrant blue and white of the glutinous rice makes this 'kuih' delightful and pleasing to the eyes. It tastes equally good with either the pandan-flavoured or the usual brown 'kaya'. The slight tinge of saltiness from the glutinous rice coupled with the sweetness of the 'kaya' makes this 'kuih' a delight to savour.


  • 820g glutinous rice (soaked overnight)
  • 1 teaspoon of Blue Butterfly Powder (to your desired colour) - dissolve in 3 tablespoons warm water
  • a few pieces banana leaf
  • 760 ml thick coconut milk
  • 3 pandan leaves (knotted together)
  • 2 tsp salt


  1. Dissolve 1 teaspoon of Blue Butterfly Powder in 3-4 tablespoons of water - let it rests.
  2. Mix soaked glutinous rice with Ingredients B and let it rest for 10 minutes.
  3. Steam the rice over high heat for 30 minutes. Remove from the heat and mix well with chopsticks.
  4. Stir in blue butterfly powder liquid into the cooked rice, mix well giving it a nice marble like creation and steam it for 5 minutes.
  5. Line a 19 cm square tin with banana leaves. Spoon cooked blue rice and white rice into the tin
  6. Cover the rice with banana leaf and place a heavy object on top to compress the rice - traditionally a mortar is used in the Peranakan household.
  7. Set it aside to cool completely before cutting into pieces. Serve with Kaya

2-Tone Blue Butterfly Powder Cheesecake

  • Blue Butterfly Powder – ½ teaspoon
  • 250g packet plain sweet biscuits
  • 125g butter, melted
  • 2 x 250g packets cream cheese, softened
    1. 1 x 250g – normal
    2. 1 x 250g – mixed with ½ teaspoon Blue Butterfly Pea Flower Powder
    3. or to the blue intensity colour that you prefer
  • 3/4 cup caster sugar
  • 3/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon finely grated lemon rind
  • 3 eggs
  • Frozen or fresh strawberries, thawed, to serve
  • Butterfly Pea Fresh flowers to garnish (if available


Step 1

Preheat oven to 160°C/140°C fan-forced. Grease a 6cm-deep, 22cm round (base) spring-form cake pan.

Step 2

Process biscuits until mixture resembles fine breadcrumbs. Add butter. Process until combined. Press mixture over base and sides of pan leaving a 2cm gap from top. Refrigerate for 30 minutes.

Step 3

Process 250g cream cheese, sugar, sour cream, vanilla and lemon rind until smooth. Mix 250g with Blue Butterfly Powder. Add eggs, 1 at a time, processing until just combined.

In another bowl process 250g of cream cheese with Blue Butterfly Powder. Our blue butterfly powder dissolve easily and mixes well. Pour into prepared pan both the processed cream cheese to give it the layer or marble look.

Bake for 50 minutes to 1 hour or until just set and centre wobbles slightly. Allow to cool in oven for 2 hours, with door ajar. Refrigerate overnight. Serve with strawberries and/or fresh butterfly pea flower (if available).

Lastly, sprinkle with Blue Butterfly Powder for that royal blue intense effect! Enjoy!

Serve with a pot of warm or cold pot of Butterfly Pea Powder Tea.

Orange Infused Blue Butterfly Pea Flower Drink

How to make Oranges sexy again!

Hot days are coming again. You may want to have some natural fruit juices with loads of health benefits for your family.

Here's an easy recipe for you. You don't need to squeeze the orange nor boil any sundried flowers - all you need are as follows:


  • 2 large oranges, washed and sliced
  • ¼ to half a teaspoon of Blue Butterfly Pea Flower Powder (or to your desired colour)
  • Honey or rice sugar or Maltitol (if you would like it sweet)
  • Handful of edible flowers e.g. butterfly pea flower, violas or nasturtiums (optional)


  1. Have 2 cups of warm or tepid water.
  2. Add the Blue Butterfly Powder and stir well and dissolve. Once the mixture has cooled, pour the Blue
  3. Butterfly mixture into an ice cube tray and freeze for at least 6 hours.
  4. Add oranges to a pitcher. Using a wooden spoon gently muddle the oranges to release some of their juice and flavour.
  5. Add Blue Butterfly ice cubes then fill pitcher with ice water and see its colour changing effect.
  6. Top with edible flowers, if desired. Enjoy !

BLUE Pineapple Iced Tea with Sage & Mint

Blue Butterfly Pineapple Tea. Today’s recipe is a quick and cooling Blue Butterfly Pineapple Iced Tea perfect for hot days.

We love those juicy sun ripened pineapple's and not just because they taste good, they help with digestion, boost immunity, lower inflammation and relieve pain.

Researchers have even found that pineapple can kill off certain cancer cells and even slow the spread of some cancers.

So here’s how to make fresh Blue Butterfly Pineapple Iced Tea:

  1. ½ to 1 teaspoon of Blue Butterfly Powder (to your desired color)
  2. 1 teaspoon sugar or Maltitol
  3. 4 cups boiling water, 4 cups ice water to make a tepid mixture
  4. ⅓ cup fresh lemon juice
  5. Some sage leaves - steeped in hot water and to mix into the pineapple juice
  6. Some mint leaves to garnish
  7. 1⅓ cups fresh pineapple juice
  8. To make fresh pineapple juice, core the fruit and cut into bite-sized pieces. Add to your blender and blend until smooth. Strain into a large jar using a fine mesh strainer

Refrigerate. Serve over ice. Enjoy!

Pro Tip:

  1. You may also cut the pineapples into cubes and boil them till soft; throw in the sage leaves and add sugar or Maltitol to taste and let it cool. Once cooled, stir in your desired amount of Blue Butterfly Powder and garnish with mint leaves
  2. Pineapple is a little acidic so it will change the colour of the Juice to a beautiful purple instantly

Roti Jala Dual Colour

Traditionally, Roti Jala comes in just one colour - yellow but we needed that something extra, a modern twist so Chef Sue has created Roti Jala more appealing using 2 colours and 2 ways of making them. Your imagination is your limit...... Here's the recipe - Enjoy!


  • 2 cups all purpose flour
  • 2 eggs
  • 1 tsp salt
  • ½ cup water
  • ½ cup coconut milk
  • ½ tsp Blue Butterfly Pea Flower Powder
  • ½ tsp turmeric powder
  • Oil to grease the pan


  1. Put flour in large bowl and sieve it.
  2. Add salt and 2 eggs in the middle and gradually add some water & Spargo Mills Instant Coconut Mix to make a batter - and separate the batter into 2 bowls
  3. Add Blue Butterfly Pea Flower Powder and mix evenly - in the 1st bowl.
  4. For brighter effect and colour - dissolve Blue Butterfly Pea Flower Powder in tepid water and let it rest for 15 minutes. (As it is very concentrated the colours will keep expanding)
  5. In the 2nd bowl of batter add the turmeric powder and stir evenly
  6. Lastly put into roti jala mould or a funnel and start drizzling the batter into the hot pan in a quick circular motion
  7. Cook for 1-2 minutes
  8. Remove from pan and fold in the sides and roll the roti jala
  9. Garnish with coriander or salad and serve with chicken curry

Royal Blue Seri Muka

To keep to tradition, most Kueh Seri Muka makers would pound the Pandan leaves to extract its green colour & fragrance. For a twist Uptrend2u decided to do a Blue Seri Muka using our Blue Butterfly Powder which saves her pounding on on the her mortar to squeeze some juice....... Here's the recipe - Enjoy!



  • 25g tapioca flour
  • 450ml thick coconut milk
  • 25g grams rice flour
  • 25g of mung bean
  • 1 tbsp of sugar
  • ½ tsp salt
  • Glutinous rice
  • Oil to grease the pan

Custard Topping

  • 2 tbsp cornflour
  • 2 tsp rice flour
  • 1 cup full cream milk
  • ¾ cup sugar
  • 1 tsp vanilla bean paste
  • 270ml coconut cream
  • 5g Blue Butterfly Pea Flower Powder

(OR to keep to tradition - 5 pieces of pandan leaves for the green colour)


  1. Wash and soak rice for at least three hours or overnight
  2. Drain and mix in coconut milk and salt
  3. Steam for 30 minutes
  4. Let cool and rests for 10 minutes and than press the rice into a 8" pan square pan
  5. Using a piece of plastic wrap, press rice down to compress slightly and form the base
  6. Combine all custard topping ingredients except for coconut cream
  7. Stir over medium heat until very thick, whisking continuously
  8. Add coconut milk and emulsify
  9. Add the Blue Butterfly Pea Flower Powder and stir well
  10. Spread custard topping onto compressed rice base. Steam for 15 minutes
  11. Cool and slice into diamonds

Why do I need to consume Blue Butterfly Pea Flower Powder?

If I leave My Blue Tea exposed, will the properties decline or oxidised?

Due to the process we employ, the properties will last however like all products exposure to external contamination and moisture, they may impact the product, particularly the latter given the humid climate in Malaysia.

What is the difference between Blue Butterfly Pea flower (powder?) and the flower version?

Safe, Healthy & Convenient in a 10 gram sachet you can bring it anywhere you want to make a cup of tea or any beverage or even to cook with. The Blue Butterfly Pea Flower Powder is very concentrated – all you need is juat a little that goes a long way.

For the Sundried Flowers you would need to boil in hot water to extract its colour to either cook with or just to make a cup of tea. Remembering that in extremely hot water some the nutrients may be lost.

The powder and flowers will produce a similar result – blue colour – but the powder will reduce the effort and time taken to achieve the desired colour and is concentrated so less is best and you are in control of the blue colour that you want to achieve.

Yes. We have a proprietary process that removes any micro organisms. However, the Butterfly Pea flowers has a natural “insect repellent” characteristics that it does not attract pests etc.

Must I always dissolve My Blue Tea before cooking or baking? or can I just sprinkle onto my preparation?

Yes, either way is available to you – it really depends on what you are preparing and how experimental you wish to be. It is best to dissolve a small quantity in tepid or warm to test the amount of Blue that you want and let it rest for 20 minutes as the powder will keep continuing to dissolve.

In making a latte for example the powder is mixed with the milk when frothing and then produces the blue colour before adding to the coffee. For cakes as an example the powder can simply be sprinkled into the mixture.

In Nasi Kerabu, you can sprinkle on the rice after you have washed them and let it rests for 15-20 minutes.
